THE BEST QUESADILLA
Vegetable Whole-Wheat Quesadilla
Ingredients
1. Heat the olive oil in a saucepan large enough to comfortably hold a flat tortilla.
2. Sautée onions over medium heat until translucent, seasoning with salt, pepper, and cumin as they cook. After about 5 minutes, when the chopped onions become translucent, remove from the pan and set aside in a small dish for later use.
3. In the same pan over medium heat, lay the tortilla flat. Evenly distribute the cheese over the tortilla. Top one side of the tortilla with cooked onions, sliced tomato, and a few leaves of your favorite fresh herbs.
4. When the cheese begins to melt, fold the cheese-only side of the tortilla over to meet the side with the tomato and onions. Let cook for another minute and then remove from the pan. Slice the quesadilla into wedges and garnish with more fresh herbs.
Ingredients
- 1 whole-grain/whole-wheat tortilla
- 1/4 cup thinly sliced white onion
- 1 tablespoon extra-virgin olive oil
- Dash of salt and pepper

Generally, these meals were tasty and were able to feed the family and several classmates with the assistance of purchasing several other foods from markets and other places. Our garden was a form of no-till agriculture, by leaving dead grass, plants, and leaves over the soil to help reduce soil erosion and help the soil retain moisture and not let it get evaporated. Reusing dead organic materials is beneficial for not only the plants, but also the environment since it is not being sent to the landfills where it will consume space.
Commonly, mass production of crops are produced through monoculture agriculture, a type of agriculture by growing only one crop. Unfortunately, since monoculture crops will produce similar characteristics of each crop, it will raise the risk of diseases and will lead to more soil erosion. However, since our garden has a variety of crops, it will produce more healthy meals and not take a toll on the soil since each crop require different amounts of water.
